Fresh cheese made from buffalo or cow's milk with very high fat content, coagulated by adding lemon juice or white vinegar.
This is the equivalent of the cream in Italian cuisine.



Can be drunk as soon as it is marketed.
Aging potential (estimation) : 1 to 2 years old.
